One of the most interesting things I have learned from spending time in the kitchen is that small ingredients can completely transform a recipe. Often the difference between a good dish and a great one comes down to small details that add depth, balance, or texture. It is not always about adding more ingredients, but about choosing the right ones and understanding how they work together.
As I have experimented with cooking and baking, I have started to pay more attention to how individual ingredients function rather than just following a recipe exactly as written. Over time, I have realized that certain ingredients consistently elevate a dish, even when used in small amounts. They are not always the most obvious choices, but they have the ability to enhance both sweet and savory recipes in subtle yet noticeable ways.
A fermented dairy product that adds both protein and moisture. Because kefir is slightly acidic, it reacts with baking soda and helps baked goods rise, creating a softer, fluffier texture with a slight tanginess that balances sweetness. I have found it especially useful in recipes like pancakes or quick breads, where texture and moisture make a big difference.
Made from ground sesame seeds, tahini has a rich and slightly nutty flavor that adds depth to baked goods. When used in cookies, brownies, or quick breads, it creates a flavor that feels more complex than traditional nut butters. It pairs particularly well with chocolate, adding a subtle richness that is hard to achieve otherwise.

As I have spent more time cooking, I have started to think less about strictly following recipes and more about building flavor in layers, making small adjustments that improve the final result.
Sometimes the best improvements in cooking come from the smallest details. Choosing the right ingredients can turn an ordinary recipe into something much more memorable, and those small changes are often what make a dish stand out.

There's something about Florence that makes time move differently. Maybe it's the way the light hits the terracotta rooftops in the late afternoon, or maybe it's just that you can't walk ten steps without stumbling into five centuries of history. Either way, I found myself moving slower than usual, stopping more often, and eating significantly more gelato than I'd originally planned.
Here's how I spent what might be the most perfectly unplanned day I've ever had, and how you can do it too.
We started the day before the city woke up. Renting electric scooters and cruising along the Arno River at dawn was hands-down the most magical way to see Florence. The streets were completely empty, the light was this soft pink-gold, and we spotted hot air balloons drifting over the hills in the distance. It felt like we had the entire city to ourselves.

After working up an appetite, we stopped at a café for the most classic Italian breakfast: a perfectly pulled espresso and a warm, buttery cornetto. There's no better way to fuel up before a long day of walking. The pastries were flaky and golden, and the espresso was rich and smooth. Italians just do morning coffee differently.

No trip to Florence is complete without standing in front of the Cathedral of Santa Maria del Fiore and feeling completely dwarfed by it. The Duomo is one of those landmarks that photos simply cannot do justice. The marble facade in white, green, and pink is so intricate that you could stare at it for an hour and still notice new details. We walked around the piazza, took it all in, and watched the crowd buzz around Giotto's Bell Tower.

We spent a solid two hours wandering through the Uffizi and it still wasn't enough. The collection is overwhelming in the best way, room after room of Renaissance masterpieces. I was completely mesmerized by the sculptures and the enormous panel paintings, each room more beautiful than the last. The building itself is a work of art, with the colonnade framing the Palazzo Vecchio tower perfectly at the end.

If you've heard of one sandwich shop in Florence, it's this one, and the hype is absolutely real. All'Antico Vinaio is legendary for their enormous schiacciata sandwiches stuffed with the freshest ingredients. We waited in line (worth it) and grabbed our sandwiches to eat right there on the street. Crusty bread, creamy cheese, roasted vegetables, and the most incredible cured meats. It's messy, it's delicious, and it's one of those food experiences you'll think about long after you leave Italy.

After lunch, we just walked. No agenda, no map, no plan. That's when Florence really reveals itself. We stumbled upon a horse-drawn carriage trotting through the piazzas, peeked into hidden courtyards, and found ourselves crossing the Ponte Vecchio, the iconic medieval bridge lined with jewelry shops that has been standing since 1345. Sometimes the best itinerary is no itinerary at all.

After all that wandering, there was really only one thing to do. We ducked into a gelateria and emerged into the golden afternoon light with cones in hand. I went with hazelnut, deeply nutty and impossibly smooth. The way gelato is supposed to be. One quick tip when choosing where to get gelato in Florence: skip the tourist traps with the colorful piled-high mounds that look like eye candy but usually are not the real thing. Go for the more unassuming spots with metal closed containers. That is usually the better sign that you are getting something authentic.

No perfect day in Florence is complete without a proper sit-down dinner, and Ristorante Paoli delivered. It's a gorgeous historic restaurant right in the center, and their truffle pasta was one of the best truffle pastas I've ever had. Fresh handmade tagliolini showered in shaved truffle, swimming in butter. It was one of those dishes that makes you close your eyes with every bite. Simple, luxurious, and absolutely unforgettable.

We ended the night at Gusta Pizza, a legendary Neapolitan-style spot near the Pitti Palace that locals and visitors have been obsessing over for years. There's almost always a line snaking out the door, and we were no exception — but standing in that queue, watching the wood-fired oven roar through the window, is all part of the experience. Totally worth every minute of the wait. The crust was perfectly charred with that distinctive salty bite, the sauce was sweet and tangy, and the burrata on top just melted into everything. The perfect ending to a perfect day.

Florence is one of those cities that grabs you from the first moment and doesn't let go. You can plan every hour or you can just wander and let the city surprise you. Either way, you're going to eat incredibly well, see things that take your breath away, and probably fall a little bit in love. My biggest advice? Walk everywhere, say yes to the truffle pasta, and be a little thoughtful about where you get your gelato.
